Romantic Dinner For Four In A Flash

A quiet night at home with your guy can be a wonderful treat, but having over another couple to share the togetherness for a date night doubles the fun! An impressive yet irresistibly inviting meal for four is easily within reach.

Simplicity reigns supreme when it comes to a relaxed evening in with friends. Keep the decor natural yet classy by arranging white tea lights with smooth, small to medium stones in the center of the table. For a round or square table, keep them in a tight (but uncluttered) circle. For rectangular or oval, set them in a longer, oblong shape. Feel free to add flower petals.

For a stylish and fuss-free appetizer, purchase a wedge of brie (about 8 ounces) and a jar of mango chutney. Let brie stand at room temperature for 30 minutes, spoon 3 tablespoons chutney over the cheese and serve with water crackers. Set the romantic mood with glasses of champagne, each containing a fresh peach slice.

Fish is a delectable and deceptively easy main dish to serve. Season four 5-ounce cod fillets with salt and pepper. Wrap each with one wide strip of prosciutto. Cook 3-4 minutes per side in a nonstick-sprayed medium-high skillet until prosciutto is crisp and fish is cooked through. Serve along side steamed asparagus with hazelnuts and butter for a delicious and uncomplicated date night dinner.

But what romantic get-together would be complete without something sweet? Not this one! Cut a sheet of puff pastry into four squares. Place 3 or 4 bite-sized chocolate bars in the center of each and bunch together to form a pouch. Brush with beaten egg and bake at 350 for 35 minutes. Melt 4 ounces of chocolate with ½ cup heavy cream and just a dash of chili powder to form a delicious and interesting ganache. Serve the bundles warm, drizzled with the ganache and dolloped with whipped cream.

There’s no doubt that with this fabulous spread, your home will be the new Friday night hot spot.
